Who doesn’t love a good crunchy cereal? I’m a big fan of cereal, it’s fast, easy, and delicious. Because I love cereal so much, I enjoy creating cereal recipes, you can find my other cereal recipe here. Unlike my pecan cereal recipe that had a variety of textures, both chewy and crunchy, this recipe is for my crunchy cereal lovers. This cereal has the perfect crunch when you bite into it, with a sweet (but not too sweet) and warm cinnamon flavor.

Of course, you can opt-out of adding in the cinnamon if you want a plain vanilla cereal but, I enjoy the added touch the cinnamon gives. This recipe is so simple and takes less than half an hour and can be stored in an airtight container for a few weeks (if not eaten by then). Did I mention how addicting this cereal is? While putting the cereal in the container, my family and I ended up eating almost half of it! Not to mention, we kept opening the jar for a quick snack, I barely had enough cereal to photograph the next morning! Pro tip: double the recipe then, hide all of it from family and friends!

Aside from the fact that this cereal is addicting, it’s also super simple to make, you might be wondering “how could it be so simple if you have to roll/shape out a bunch of little balls?” Actually, you don’t have to roll anything out! Instead, you use a piping bag (a ziplock bag works just as well) if you’re not used to using a piping bag, it will take you a few tries to figure it out but, after you’ve piped about ten, you get faster and faster as you go! It really took me about five minutes to pipe out all of my dough. And the dough, super simple, it takes less than ten minutes and you use only one bowl! So this cereal is: quick, easy, delicious, and healthy, what more do I have to say? Go ahead and try it and let me know how it turned out! 🙂

Vegan and Paleo Cinnamon Cereal

Ingredients

  • 2 Cups Almond Flour
  • ½ Tsp Baking Soda
  • ½ Tsp Baking Powder
  • 1 Tsp Cinnamon
  • 1 Tsp Vanilla
  • â…” Cup Maple Syrup
  • ¼ Cup Almond Milk
  • 1 Tbsp Coconut Oil Melted

Instructions

  • Preheat oven to 350°F and line a baking sheet with parchment
  • Combine the almond flour, baking powder, baking soda, and cinnamon in a bowl, mix together
  • Slowly add milk, and mix
  • Mix in the maple syrup and vanilla, mix until a very thick batter forms
  • Place batter in a piping or zip-loc bag and cut the tip
  • Pipe the dough into small balls onto prepared pan
  • Bake at 350°F for 12-14 minutes (baking time may vary by cereal size)
  • Allow cereal to cool before storing

*For corn-free baking powder, combine one part baking soda to two parts cream of tartar (ensure corn-free), I like to make a jar-full to keep handy
