we all know that being on a restrictive diet like SCD and Paleo can be hard, not being able to enjoy the foods we grew up with. One of my favorite breakfast foods is cereal, it’s super quick and easy, just pour it in a bowl and eat it, not to mention the fact that it also tasted sweet. When I first switched to SCD, I found it hard to find a breakfast that was quick and tasted good. You might be in the same predicament, trying to find a delicious and easy recipe to make ahead for throughout the week… or you might just want some cereal. Either or, you’ve clicked on the right recipe!
You’ll feel great after eating this cereal since there isn’t a high sugar content to make you crash. Not to mention that the dates contain plenty of nutrients and the pecans in this cereal will keep you full until lunch. I also find having a handful of this as a good snack during the day.
I call this a “cookie” cereal because when you bake it, the edges are nice and crispy while the center is more soft and chewy, I find this method more enjoyable because when you eat it you’ll get a variety of cookie-like textures. This cereal takes only six ingredients and can be made entirely in a food processor or blender. While this recipe uses pecans, you can use cashews, hazelnuts, or any other type of nut you may prefer. If you have a nut allergy, you can substitute the pecans for oats (not SCD or paleo).
I also refer to this as a cookie cereal because when you first bake it, you end up with what essentially is a giant cookie… so is the cereal cookie crumbs?? I’m not entirely sure. What I am sure about is that it’s super easy and 100% worth making.
SCD & Paleo Pecan Cereal
Equipment
- Food Processor or Blender
Ingredients
- 1 1/2 Cup Pecans
- 14 Medjool Dates
- 1 Large Egg
- 5 Tbsp Maple Syrup (sub honey if SCD)
- 1 Tsp Vanilla
- 1/2 Tsp Baking Soda
Instructions
- 1. Preheat oven to 300F and line baking sheet with parchment
- 2. Blend pecans in food processor until finely chopped
- 3. Add in dates and blend until combined
- 4. Add maple syrup, egg, vanilla and baking soda. Blend until a dough forms
- 5. Press dough in thin and even layer
- 6. Bake for 45-50 minutes
- 7. Allow "cookie" to cool then, break into desired size
- 8. Pour cereal into bowl and enjoy!
