Don’t you hate it when you buy a bunch of bananas for them to quickly get overripe? Honestly, I hate not being able to enjoy a perfectly ripe banana but I love the excuse to make banana bread or in this case, banana muffins! These muffins are great because they’re moist and fluffy like banana bread but are protein-packed and nutritious and a great way to start your day! Muffins are perfect for rushed/ on-the-go mornings because you can simply heat and eat! (or you can eat it cold if that’s your thing) These are great to make ahead for the week and you’ll love these because even after a week, they stay just moist and fluffy as they were when they were first baked (if you haven’t eaten them all just yet). You can spread some nut butter on top for a breakfast that will keep you full. Muffins don’t have to be eaten only as breakfast, you can eat one as a mid-day snack or even as a dessert (they’re that good!).
These muffins are so simple to make and so customizable, in this case, I added walnuts because I liked the crunch it gave in contrast to the fluffy texture, but, you can substitute the walnuts for whatever you want, you can put in berries, chocolate chips or even a different kind of nut like pecans.
The Details:
These muffins take less thank ten minutes to put together and taste amazing! The protein I used is collagen powder, it’s great for your skin, hair, and joints, it’s also a great protein source. Of course, you can substitute the collagen for your preffered protein powder. Like I mentioned above, you can also substitute the walnuts for an add-in of your choice. Pro-tip: every oven is different and some cook faster than others, if your muffins appear perfectlly brown on top but still mushy on the inside, cover the muffins with foil and continue to bake until done. This will prevent the muffins from browning further/ burning.
Paleo and SCD Banana Protein muffin recipe
Ingredients
- 2 Ripe Bananas
- ¼ Cup Coconut Oil (Melted)
- 1 Large Egg
- ½ Cup Maple Syrup (Sub Honey if SCD)
- 1 Tsp Vanilla
- 1 ¾ Cups Almond flour
- ½ Tsp Baking Soda
- ½ Tsp Baking Powder (See note for SCD option)
- 5 Tbsp Collagen Protein Powder (Or sub 80g (5 Tbsp) of protein powder of choice)
- ½ Cup Chopped Walnuts
Instructions
- Preheat oven to 350°F and grease muffin pan
- Peel and mash bananas then, add coconut oil, maple syrup, vanilla, and egg, mix until combined
- In a separate bowl, combine almond flour, protein powder, baking soda, and baking powder
- Add the dry ingredients into the wet, mixing well until a thick batter forms then, fold walnuts into batter
- Scoop the batter into prepared muffin pan then, bake at 350°F for 20-25 minutes or, until a toothpick comes out clean
- Allow muffins to cool before eating
