Don’t you just love donuts but hate how they make you feel? Or don’t you just hate how you can’t find an easy recipe that’s friendly with your diet and doesn’t require the long and messy process of frying? Well donut worry! (Sorry, I had to) This donut recipe is super easy, it takes less than 30 minutes to make, is super delicious and it’s also versatile! And did I mention that they’re mini? (So cute!)

These donuts are not only cute but, they’re delicious! Even though they aren’t fried (which saves so much time and cleanup!) these donuts are incredibly fluffy and have so much flavor! In my tips and tricks section, you’ll see that I give different flavor combinations from the classic old fashioned to a fruity twist, you’ll want to make them all! I definitely recommend that you make a double batch and separate the batter so that you can try all of the flavors!

I love pairing it with the vanilla version of this recipe, you get the fluffy texture from the doughnut and the rich creaminess from the Nutella, it tastes amazing together, you have to try it! Tips & Tricks:

  • You can make it in a regular-sized donut pan but, you’ll end up with less
  • Split the batter in half and add a different flavor in each for variety!
  • Add in coco powder for chocolate donuts, cinnamon and nutmeg for old-fashioned, or your favorite freeze-dried fruit blended into a powder for a fruity twist!
  • If you make too many, donuts can be frozen (for up to 3 months), then later defrosted and enjoyed!

Ingredients

  • ¼ Cup Maple Syrup (Sub honey if SCD)
  • 2 Tbsp Coconut oil Melted
  • 2 Large Eggs
  • ½ Cup Milk of choice
  • 2 Cups Almond Flour
  • ½ Tsp Baking Powder
  • 3 Tbsp Coco Powder Optional (add for chocolate flavor)

Toppings (optional)

  • Nutella
  • Homemade Glaze

Instructions

  • Preheat your oven to 350°F and grease a 12-count mini donut pan
  • In a large bowl, mix your melted coconut oil, maple syrup, eggs, and milk
  • Slowly add in your almond flour and baking powder and coco powder (if using)
  • Mix well until a batter forms
  • Spoon your batter into your greased pan
  • Bake at 350°F for 7-10 minutes until fluffy and golden brown
  • Allow donuts to cool before topping
  • Place desired toppings on your donuts and enjoy!

Notes

To make the glaze, take 1/2 cup- to 1 cup powdered sugar or powdered monk fruit (depending on how much you want to make) and slowly add milk, one tablespoon at a time until you have a liquidy mixture, not thick like buttercream but not too watery. Dip your doughnuts and place on a cooling rack and allow the glaze to set a little before consuming/storing. Vanilla or cinnamon can be added to the glaze if desired.
