Why we bake healthy

Surprisingly, I didn’t start baking healthy until about a year ago. I used to bake with all of the ingredients that were considered “normal” which consisted of: processed sugar, white flour, conventional dairy, and many other ingredients that aren’t the greatest for you. I also grew up with the standard American diet: highly processed and sugary foods, occasionally eating a vegetable or “healthy” food.

Somehow, I was still quite healthy, until about two years ago. It began with feeling very fatigued every once in awhile, that once in a while turned into once a week, then once a day, then all the time. All the time I felt very fatigued and weak, I would get very pale and my hands would be clammy, almost as if I was about to faint. For a year and a half, we ran all kinds of tests to see what was wrong, seeking answers from both conventional and holistic doctors. Doctors suspected all kinds of things from the thyroid to the adrenals, brain, and other glands/ organs, they suspected food allergies and toxins as well (I did have high levels of toxins but, that was not the answer).

In February of 2020, one of my doctors gave me an allergy test which revealed that I was allergic to both gluten and dairy, which explained why I felt awful after eating both. I really didn’t want to give up either of the two, I loved my chocolate candies, store bought cookies, and cheese! After giving up the two, I also gave up the processed sugar as well, it just wasn’t good for me either. Of course, after giving up my three favorite foods, I was craving something similar to those foods and thus, my passion for baking healthy and recreating my favorite foods was born. My first few recipes were….not great, and it was very discouraging at first but, slowly my recipes improved to the ones that you see posted on my blog today.

Fast forward to December 2020, I was eating right but, I still wasn’t feeling great and we still didn’t have an answer until my doctor recommended a SIBO test, I had no SIBO symptoms but, we were desperate for answers. Two weeks later, my results came back positive, and I was put on a SIBO protocol and SCD diet. I will have to say, SCD is a super hard diet, you can’t have gluten, dairy, grains, or other specific foods like coconut sugar or chocolate (not the chocolate!). However, just a few weeks after starting this strict diet, I felt like my old self, happy, energetic, and having the ability to be active again.

Seeing how food can have such an impact on my health and wellbeing showed me that eating healthy is 100% worth it in the long run. However, not all healthy foods have to taste bad, and we don’t have to miss our favorite foods! I create recipes that are both healthy delicious, along with some of our childhood favorites!
