Girl Scout cookie season is still here! Samoa’s and Thin Mints are the most popular out of all of their cookies. Some may say Samoa’s are the best, and other say Thin Mints are the best, I posted a quiz on my Instagram story, and Samoa’s came out on top with a 56% majority (which is still pretty close). Whichever is your favorite, I have a copycat recipe for both! (You can find Paleo Thin Mints here) My Thin Mint recipe is pretty simple, and pretty delicious but, we’re not here to talk about Thin Mints, we’re here for the Samoa’s! These Samoa’s are one of the easiest recipes that I’ve made, it takes only 3 simple ingredients and 3 simple steps: blend, scoop, and dip!
You can make these cookies as simple or as fancy as you like, you can poke the little hole in the center, drizzle perfect little chocolate stripes on top, spending extra time to make it look just like the classic cookie. Or, if you don’t care much about looks, you can throw these cookies together in less than 20 minutes and enjoy them right away! Because these are no-bake cookies, you save so much time! You don’t need to wait for the oven to heat, for the cookies to cool, etc.
The Ingredients:
- Dates: The dates act as the binder for your cookie, it also adds a caramel-like flavor. Dates contain antioxidants as well as, magnesium, selenium, copper, potassium, and more beneficial vitamins.
- Shredded Coconut: The coconut acts as the flour in your cookie, it also adds a nice texture, and is one of the key flavors in a classic Samoa. Coconut shreds contains fiber, manganese, and copper.
- Vanilla Extract: You don’t really have to add the vanilla, but, it really enhances the overall flavor.
- Chocolate: A delicious addition and the literal icing on the cake. If you use dark chocolate you’ll get vitamins A, B, K, E, and many minerals as well.
Tips & Tricks:
Honestly, since this recipe is so easy and has only 3 ingredients, I don’t really have many tips.
- If your coconut is untoasted, place it in the oven at 325 degrees Fahrenheit, and keep an eye on the coconut until golden brown (about 5 minutes)
- If your dates feel a little hard, soak in warm water for 10 minutes to soften
Paleo and Vegan Samoa’s
Equipment
- Food Processor or Blender
Ingredients
- 2 Cups Shredded Coconut Toasted
- 16 Medjool Dates
- 1 Tsp Vanilla
- ½ Cup Dairy-Free Semi-Sweet Chocolate Chips Melted
Instructions
- Add your toasted coconut, dates, and vanilla to a food processor, blend until a crumbly dough forms
- Take one tablespooon of your dough and press into a ball, then into a cookie, repeat until you have no more dough left
- Place your cookies in the freezer for 10 minutes
- Microwave your chocolate in 30-second intervals, stirring then repeating until completely melted
- Dip the bottom of your chilled cookie in chocolate, repeat until all cookies have been dipped
- (Optional) Drizzle extra chocolate on top of your cookies
- Chill until the chocolate has set
